I know that there are many many cooks out there who have already discovered the joy of boneless chicken thighs but to me this is an entirely new concept! A concept so amazing and new to me that I had to try it. My local Whole Foods Market had boneless chicken thighs on sale and I had seen an idea in Food and Wine Magazine that I wanted to attempt. The recipe is delicious and I made a few adaptations, as usual, to suit my own taste and kitchen. The rosemary skewers are inspired and add the most scrumptious flavor to the chicken in no time at all.
Boneless Chicken Thighs on Rosemary Skewers

Super simple, great tasting gilled chicken - perfect for a weeknight dinner with friends. Sophisticated yet clean taste that will impress any tough food critic.
Ingredients
- 2 shallots, finely chopped
- 3 garlic cloves, minced
- ½ tsp crushed red pepper
- 1 tsp. minced rosemary
- 1 tsp. dried spicy oregano, crumbled
- ¼ cup fresh lemon juice
- ¼ cup extra virgin olive oil
- 2 lbs. boneless, skinless chicken thighs, cut into 1½" pieces
- sea salt and pepper
- 8 sturdy rosemary sprigs, leaves on + 8 regular wood skewers if your rosemary is not sturdy
- lime wedges for serving
Instructions
- In a large bowl, combine the onion, garlic, crushed red pepper, minced rosemary, oregano, lemon juice and olive oil. Set aside ¼ cup of the marinade. Season the chicken with salt and pepper and add to the bowl. Mix well, cover and marinate for 45 minutes.
- Light the grill. Remove the chicken from the marinade and thread the pieces onto the rosemary skewers. If your rosemary skewers are not sturdy, you can thread the rosemary using a regular wood or bamboo skewer next to it for added strength. Discard the marinade. Grill the chicken over medium heat turning and basting with the reserved marinade until golden brown and cooked through - about 20 minutes. Serve with lime wedges.
